so initially I had a 2.5 inch rough country lift. Then I bought the bilstien 3" inch lift. My question is can I put both of them on. And would I be putting any stress on any components. Or would I need to replace any parts going this high?

No. You can not and should not stack any lift kit with another lift kit.

I would just be adding a 1.5 inch strut extension to a 3" coil

No don't do it. First off, you will run into alignment issues, also steering would suck with that much of angle. That's why they make drop bracket lifts starting at 4 inches. Second, like sicyota04 said, it would ride and drive like crap. If you want 5" inches of lift without a DB lift, do 3"suspension and a 2" body lift, that way you the 5" lift without being a mechanical time bomb.
