The amount of poke of your desired does come from offset, but width is also a factor that is considered.

    What is the wheel width?

    Cool stuff
With that you will get tire poke, but the wheel will be inside the fender and close to flush

What tire size would you be going with? We use to "compare" different wheel specs with tires. It is a "general calculator", but it'll show you the difference in width

As a visual, heres a common wheel and tire package spec we offer,

17x8.5 -10 with a 285/70r17. Your poke would be similar, wheel being essentially flush with the edge of the tire poking out.

While not being a bilstein setup, nor doing this customer's suspension package - he did have a spring perch which is at 2" of lift upfront.

I did recommend and prefer to do a CMC and other trimming to fully clear the tire under compression if he were to go offroad. However, it does not rub for the daily driving as a commuter vehicle.

I know 275s are more pricey.. but thinking of running those just to be safe.. I know KO2s make em.. Cooper ST Maxx.. even Falken AT3 have em.. I want avoid CMC if all possible

Take a look at the manufacture website per the actual tire specifications. Another site to look at would be www.tiresizes.com as we have found they do list every tire's actual height and width.

Ko2's, or BFG do run smaller as well.

Avoiding a CMC is "possible" for daily driving, however your wheel spec does contribute to being wider.

I figured I was safe w 17x8.5 w 4.5 backspace.. I’ve done tons of research on what wheel/tire setup is perfect for the 3rd gens.. I have a friend who runs 17x9 Fuels w 285 KO2s.. and even w CMC rubs on full lock.. 3rd gens are finicky

This helped me so much! I needed to say thank you. That website put things into perspective. I have been searching high and low for a website like this. Great resource.
