    When will I learn….figured it’s a nice cooler NH morning, and we’re up at the lake for the weekend, but needs a little clearing done, so I start weed whacking and a little beach raking, then BAM… ouch, ouch , Oowwww. Damn if I didn’t step on a ground nest of those damn ground wasps, and got stung 4 times! Quick end to my morning work…. A little backing soda water paste mix, and now I rest, work detail is over.

    8 cups milk
    1/2 tea. salt
    3or 4 tea. white vinegar
    Heat milk and salt to @185*. stirring to not scorch. add vinegar,heat for a few minutes. remove from heat,cover with a lid and let sit for 20 minutes.scoop out the curds to a cheese cloth lined strainner and drain. wrap in the cloth and squeeze excess liquid out. add salt to taste and you have riccota cheese.some recipes also call for some heavy cream also :thumbsup:

    yup thats right. but,i like to know old school methods of food prep and preservation. i make saurkraut every fall when i can buy it for 1.50 a can.plant tomatoes and make salsa every year. etc,have you ever had REAL brined pickles with no vinegar added,just fermented in salt water. they get as sour as they can be. add some sugar and bam,

    my grandparents out in the mountains bought very little food. they preserved food from the farm.its interesting. ive watched grandma churn butter. make soap,cure hams. press apples for cider,then use the leftover to make vinegar.pick wild berrys for jam etc..
