    Thanks for the reply Scott. My area is rich in local history. Burning of Chambersburg, battles in Gettysburg. Small forts such as Fort Mccord, Fort Loudon. Our family cabin is located in Horse Valley. A valley nestled in between two mountains. Rumor has it during the civil war farmers took their horses to the valley because it was hidden from Confederate view until close to it. Hence the name Horse Valley.

    Lots of interesting facts about the line. Having grown up in merry-lund, I was up on the historical facts about the state. One of the most interesting facts about the line was that it was done with surveyors instruments of the time, once GPS became available the line was re-checked and found to be within inches of being spot-on. The old MD/PA line used to be so much farther north that Philly was within the MD boundary. MD used to go all of the way to the Atlantic, the land was divided and sold to more royalty that settled the colony that became Delaware. I believe that it was some of these issues that led to the 2 English men to come over and survey the line.

    There's a great story about it on YT from an old History channel show called "How the states got their shape"

    If anyone wants an abridged version of the history, Mark Knopfler of Dire Straights has a good song about it called 'Sailing to Philidelphia'.

    Another great story is how they devised the plan to draw the arc that sets the boundary between PA, MD and DE. They were a crafty crew.

    Im a big Civil War buff. have a battle field less than a mile from the house. really into reading and studying the campain in the Shenadoah Valley where i live. 4 battlefields between here and work. thats 17 miles.

    My wife has a killer gumbo recipe, unfortunately she’s already gone to bed. It’s also one where she goes by feel on the measurements so I’m not sure she could write it down.

    I’ve had Emeril's gumbo at his restaurant in New Orleans, it’s pretty darn good and is really similar to my wife’s. Looking at that recipe I’ll throw out these suggestions to make it closer to what she does.
    • Use the powder roux mix instead of making it with oil and flour. I know it’s sacrilegious but it is a lot easier, quicker, and more consistent in flavor
    • Buy a bag of the frozen gumbo veggies, it’s just easier
    • Instead of his Rustic Rub we use Tony Chachere's Creole seasoning or even better “Slap your Mamma” Creole seasoning
    • She will roast the chicken separately with just the Creole seasoning and debone and shred it into the pot with everything else and cook it all for an hour, hour and a half.
    We add the file powder at the table to thicken it to individual preference.
