    I'm also one of those cooks that dont really measure stuff, I get it :laugh:
    First time trying something new and I usually follow a recipe exact. Once I decide what I like or don't I work from there until I find a magic combo that works for me.
    I've got to keep it as much "from scratch" as possible to keep it gluten free so the roux will be the biggest challenge as I don't know how GF flours will do
    And I've got Tony's seasoning and Zatarain's file powder - had to look that one up, never heard of it before! :laugh:
    Might give it a go this weekend so I'll let you know how it goes. Every once in a while I just get a wild hair to try something completely new. I've had gumbo before at restaurants but never made it myself
    Also, I figured if I was going to try a random recipe from the internet for this Emeril would be a pretty safe bet to have something good.

    Oops, I forgot about your gluten sensitivity when I said use the roux mix. I think the rest of the ingredients are ok for you. Can you eat rice :eek:? Gumbo without a spoonful of rice is weird… :D

    Re. the file powder, I wondered if they would have it outside of the south, it’s one of those oddball things and used in very few dishes. In case you don’t know, it’s pronounced “fee-lay,” I guess sassafras was too hard lol.
