    Partially cook the bacon first.

All great recipes start with first you cook a pound of bacon. Because bacon grease. Sometimes I wrap them most times I just cook them in bacon grease. In cast iron of course.

I'll grill sea scallops sometimes and prefer them over bay scallops if doing so

But anymore prefer just throwing them in some bacon grease and calling it a day.

Waited too long and today could only find snow crab, no King Crab legs anywhere. So got the usual 3 pounds for my son and I. Lot more shell on snows than King though.

Living in the middle of the Country can be a challenge. Hunting in Ontario this year the Skipper who lives in Boston brought us fresh live clams for the first night's meal

They wouldn't let him bring live Lobster across the border

Since I started the business, my home culinary skills have become rare and mostly non-existent. Not that I'm anywhere near your level. You have it down to a science. I still grunt like a caveman and marvel at fire. Summer is too hot to cook and winter I'm either cooking, buying stuff to cook or cleaning the trailer so I can cook. All though I have (mostly) learned how to cook on a 3/4" stainless flat top. It's a little different and another tool for the tool box. Maybe someday I can bring smoker, fire and flat top all together.
