    Too many years watching water boiling in a boiler I guess. True critical mass has been achieved at 21:47 although it is a non pressurized vessel in the smoker. 226 and slowly rising as it evaporates, tommorow will go with a dry pan for higher temps with meat. Wanted to impart smoke and water on the inside for seasoning on the first run. Think I can do it with what I have but want to move up from a 4 cfm fan to 10 for the cold weather here.

    Edit: My target temp on the controller is 250, the fan has run non stop and can't quite get there.
