    Ok I finished eating and took some better pictures.

    For the record @RickS started this not me so when you go broke lol well you are on your own!!


    I too have 2 full sets of Chicago Cutlery Carbon Steel knives. I can sharpen knives and keep them sharp but I could never get what they get at the shop by hand . Perhaps if I invested more in stones and time etc but what I do is take one set over once a year or year and a half use depending have them sharpened while I put the back up set in use. I do have one Wusthof Classic 6 inch Chefs knife, which I am not that enamored of this is not do to the knifes ability to hold an edge it is the handle ergonomics. For me personally and the issues I have with sense of touch and finite control when my hand is closed down below an inch or so I do not like the hook on the but of the knife. All in all it is a fine knife just ergonomically not for me.

    I now have a Shun Premier Santoku and a Shun Premier Pairing Knife. I have used the Santoku a few times now and straight out of the box with a little touch up buff from the shop if you saw my post I rested it on a firm roma tomato and with out anymore pressure then I used with the Chicago to hold the tomato in place while I grabbed a paper towel for the end cuts it sliced cleanly through . So there is definitely a learning curve , my Chicago's would do similar after freshly sharpened at the shop or touched up by me but it took a little more pressure. The pebble finish does not break the vacuum as I had hoped it might when slicing wet fleshy vegetables but it will slice them paper thin . It will trim the silver off an eye roast with minimal force on a drawing cut. I have not attempted chicken yet.

    The pairing knife is brand new today and have not used it if I think about it I will let you know .

    I like the handle design as it has a deep belly in the handle affording my hands solid purchase and moving the knife through cutting positions is comfortable. I do wish there was texture on the handle for a more positive feed back in my hand . However, again this is my hands and preference for ergonomics etc YMMV

I did try a few other Shun handles they had but they would not work for me perhaps they would for you and save your self some money. I do not flense or nor debone much anymore ie ohh once in the last 5 years teaching my daughters how to do so . Ergo no real need for me to own that type of blade.

    Cyphers shrinking wallet you mean . lol And I am so far from an expert it is not even funny like a good blade prefer if I am going to buy something buy it once cry once . Hence my Chicago Cutlery stuff is over 20 years old . If you like though we can switch to gun talk I did just take my new 40 Tupperware to the range while I was there for work yesterday nice flat shooter for it's barrel length sites are off a few thou will have to have them shifted but it works real well in cqb point shooting.

    Well that sucks , I hate to ask the obvious but have you started checking plug wires and the HEI cap for carbon tracks or small cracks ? On the tv well you wanted a new one anyhow :}

    I'd like to shoot one of the new Springfield XDS DA/SA. With no better than I shoot, lighter SA have been the only way for me to get a decent group. But hell, even when I'm not shooting worth a crap I still have fun.

    And that is all that matters :] See if you can borrow or shoot a Sig DAO very reliable and weighted very well in the 40 and 45 I have the 40 229 and the same at work fast follow ups ( Failure drill 2 C 1 H is very intuitive with it) , easy single hand reload , well made no snagging and smooth action. Give one a try . .I have handled the Springfield meh but I have several 45s put the Springfield 45 XDS next to a Colt Combat Elite 45 and yeah umm no contest. But what ever works for you and your wallet go with it .

    Arkansas Tri Hone Stone for sharpening I have a steel for touch up in the kitchen and a cheater strope in the drawer. I have an emergency in expensive enclosed permanent angle draw style ceramic but do not use it much as it is small and in a bag in my truck you figure it out.:}

    I rebuilt the HEI all new parts. Still not firing
    Have to check the switch see if it sending 12 to the coil. Bit the storms started.

    I have a Sig 239 in .40 nice compact dimensions everywhere but the weight. But then there's not much flip. I did pick up a XDM 45 4.5 a couple years ago - like it fine but just can't seem to get in sync with it. By far my go to is my commander sized 1911 with the bobtail. With slim grips and a thumb relief for the mag release, it fits like a glove.

    See there you go in your hand the slim grip in mine I need the larger grip either stippled or pachmayr it is all In how it feels to you . My personal 229 I got the .357 barrel with it put it on twice the flip becomes very noticeable with that round even in it lol I referred to it as a bit umm Snappy ... My daughters did not like it either , I have shot a 4 inch .357 revolver and the flip was equivalent to me at least.
