    Good morning folks. The little dudes are still in bed and the boy has a pretty nasty cough. I'm still on my 1st cup of coffee and the only noise is my wife putting breakfast together. Last I checked it, it's 42 degrees and partly cloudy.

    That's the 7" rocker. Lots of things to be minced now. Hard to imagine a 10* angle in the kitchen. That should make for a delicate edge. You're talking about surgical scalpels at that level.

    Yeah one of the reasons went with it. Still have my German Henckles Pro S set for heavy duty work. And Chicago Cutlery for sometimes use. But for fine work these 3 should take care of that. In the end will use 7 knifes for about 99% of my work. So time to come up with a storage system (magnetic block maybe?) for those 7 and put the others away I think. Should keep out a bread knife too though I guess. Wait a Japanese bread knife would be awesome, hmmm.... Make that 8 with one more to add down the road.

    Looking forward to seeing pics of the Miyabis. That series with the Masur birch handles are beautifully unique. I can see paper thin slices of bread in your future. Talk about cutting carbs.

    I got cheapo 10$ ole hickory cutlery. Now hunting knives are different. Some are used in the kitchen also. Like my ulu.

    We got 6” of snow last night... very nice cause it covers all the dog shit. Lol
    The snow has all been shoveled and blown. I made huge pile in the center of my work yard about 15’ high. Put a ladder up to the top. A nice little hill for the grand daughters when they come over later. It 25 deg outside and I’m having a hot chocolate. Later I have to make the stuffing... that’s my contribution to tonight’s dinner. Cheers everyone and stay safe.

    Well just put me in the will and have them sent out to me and when I get what you have collected I will finish it for you :} See easy fix :} lol .Those do look good , they come with some where between 9.5 and 12 deg edges? Can you specify when ordering? With a 63 RC you are going to need diamond stones to keep the edges crisp. How is the weight and balance in the hand ? The Cryogen hardening is neat though arguably a standard heat /anneal cycle you get the same results so ... . Please do a comparison test if you can I am curious , I have the Carving set now and I am looking toward Shun TDM0771 Premier Kiritsuke Knife, 8", Silver next. I am not keen on those birch handles it is personal preference though, they are beautiful to look at. But even after having the surgery on the hands I real am leery of not having a handle with the palm swell or butt swell/hook to I know exactly where the knife is indexed.

    Still doesn't mean I won't complete the set though :}

    I would really think about the mag block before putting your knives on it buy one for testing put your thin steel ruler , safety razor and such items on it. Let them sit on it a week or two and see how much induced magnetism in in the tool that had none to start with. ..... I have not tried this with a knife but I fear the weak magnetic field it induces will cause the blade to attract the very fine metal dust created when honing / sharpening so you then are pushing the particles into your stone / strope.

    HWG material is easy to come by these days stack it for your slot sizes and cover with wood on the out side looks pretty but is really functional.
