    Good Friday morning. 3-5" starting around noon. Wish they would salt or at least sand around here. They are trying to reduce salt and sand run off into the watershed so almost never salt anymore. Claim it is usually too cold for it to work anyhow. I hate ice, especially driving on it. If your not going to salt anymore how about reducing my taxes?! But no, they just went up again.

    That sounds good but never done it with venison. Think I would treat it just like beef though. Making pastrami I usually steam it after smoking it, just wrap it in foil and add water or apple juice. Seeing how venison is so lean I'd also steam it after first smoking it. With pastrami I don't use temp but more "feel" and jiggle but not sure if venison would do the jiggle. I also probe with a toothpick to tell when it is done, no resistance it is done. By steaming it you can't really over cook it. Well you can make it so that it falls apart when you try to cut it but IMO nothing wrong with that in my book. Just don't want it to dry out which steaming helps prevent. I do a lot of Michael Ruhlman methods or modify them. Good luck!

    Have a lot of limestone streams here and cressweed in most all of them. Trout season just opened back up on Jan. 1 here for catch and release because the limestone cricks don't freeze over. But not a fan of me freezing over and chipping ice out of my guides. A cress bug fly is killer because there is so much cressweed. You be careful going in there after dark :rofl:

    Morning All

    We got just a dusting of snow yesterday. Now with this big storm they're saying 1-3 inches.
    We are not prepared for this storm
    Got lots of food for us and dogs/cats. Plenty of gas for the gen.
    But,,, the wife tells me we are out of coffee. :goingcrazy::goingcrazy:
    She said,, "I know you went to the grocery store yesterday, I didn't put it on the list ."

    Good new at work yesterday , we are getting a bonus,,,$750.00 before taxes.
    More good news at work,,,,
    I ordered Girl Scout Cookies :yes:

    Okay, I may have worded that to make it sound like we sit around eating seaweed and kale...maybe I should clarify. :rofl: We don’t sit around eating seaweed snacks. It’s more we have the seaweed with Japanese or Korean food. I taught in Japan for a year after college and one of our friends is Korean and it is just a staple in both dishes. Along with sushi, which I know is not amongst the favorites on this thread.

    A lady at my wifes work loved a place that had kale tacos. :puke:When she suggested her and my wife go there, my wife laughed not realizing she was serious. Needless to say, they didn’t develop a great friendship.

    Yeah I used to pull into Sasebo quite a bit, Busan in Korea, and a whole lot of other places on the Pacific Rim. And others around the world. Have eaten my share of seaweed back then mixed in with other foods usually. Some good some not so much. A lot of the food on the ships is sourced locally after your out to sea for a month of so. I think that because I ate so much fish heads and rice as we called it that I am fond of American food now LOL. Meat but try to skip the potatoes because of carbs. Remember when we pulled into Hong Kong and after years of going there all of a sudden there was a KFC. We went nuts. Some claimed it was seagull and not chicken. Hey the Colonel's Batter can make anything taste good Come to think of it been a long time since I have eaten at KFC. Wonder if it taste as good as I remember. I doubt it, seems like I am disappointed anytime I try fast food anymore, or even a lot of restaurants :pout: People may pick on So Cali but the one thing I remember most is that there was a LOT of places to pick from to eat, and styles of food and most all of it was great. I'm sure that it has only grown better since then. Kale wasn't a thing back then though :anonymous:

    We have a large Korean population over here too. There’s a Korean BBQ walking distance from us and I agree it is damn good!!

    Korean and Filipino street vendor BBQ to me is some of the best food on the planet. Japanese also had some pretty decent BBQ but you had to look hard to find it. I give a slight edge to the Filipino pork barbecue. If I close my eyes I can smell it to this day. Along with smell of diesel exhaust and a few others I'd rather forget. The vendors used to tell us it was monkey meat on a stick but it was usually pork.

    I've tried to reproduce it even used banana ketchup, calamansi juice, and sugar cane vinegar in the marinade. Come pretty close and not every street vendor did it the same. With the exception that it was all fantastic.
