    I think it's a desert thing. There are places here that makes you think there should be a fly swarm near-by. Of course they are inhibited by unsavory individuals so it shouldn't be a suprise.

    Try the Engine or Boiler room of a ship, what is this AC thing you speak of? Pour the sweat out of your boots before you leave the pit. Not just the Gulf but pretty much anywhere along that fat line around the center of the earth.

    After I retired from the Navy lived in Asheville, NC where I did my twilight tour. Head hunter contacted me about 5 years later and said Rochester. Thought she meant NY, had no idea there was a Rochester Mn. which is actually named after Rochester NY. Got excited the great yellow father is in Rochester NY. But Kodak is a shadow of its former self, slow to the digital world. Rochester, NY isn't such a bad place. The Toller in my avatar is from Cayuga Kennels. Turns out Rochester MN. isn't such a bad place either. Head Hunter was good.. On the other hand Ohio, ugh.

    They sent me to PHX (Scottsdale) from Foundation here to the Clinic there in January couple of years back. It snowed when I showed up and they had a hard freeze. I was told I can never come back. Ran the Apache trail I first ran it in the 70's. It is almost civilized now. The rental car place was not pleased however.

    Jungle is worse. Shit River, Philippine Islands. But yes I hear you. And there is almost always the smell of diesel fuel.

    Bastage where are you getting an outside skirt steak?! A hanger would be great but impossible to find here they almost all go to Japan. I do an inside skirt like you though I do them pretty much whole and directly on the coals.

    Over the last week been real pleased with my experiments cooking with Head Country Marinade and Butcher BBQ phosphate tenderizer.

    Choice grade Ribeye, check.

    Capsteak of course check, great.

    Last night used both on a T-Bone porterhouse.



    And remembered why I don't care for a NY Strip steak. Tenderloin (Filet Mignon) was great. But for what ever reason NY Strip and me do not usually work out. I know many on here like them, I struggle to ever have a good one. Revenge tonight was in order. Get that shitty taste out of my mouth. OK kind of harsh but not so far from the truth. For me...

    Started with sliced potatoes, onions and carrots. In the middle put some thyme and basil from my plants on the deck. And a stick of butter. And Chicken Montreal Seasoning.



    Finally got propane for the gasser. And pellets. Used pecan wanted a light smoke and not overpower. Picked up a 6 pack of pellets and they work extremely well in the Weber smoke box.



    Top sirloin for the son. And 4 pineapple jalapeno brats. Because. Kid likes his steaks well done so go started on the "other" meats first.

    Ready to crank it up and sear. Opened foil packet and threw thyme and basil overboard. And sprinkled 2+ year aged parmesan cheese on top of potato packet.



    Sea scallops. They don't take long. Basted with almond oil and Salt and Pepper.



    And a butter garlic sauce. With fresh chives and lemon.



    Revenge can really taste good..

    @Cold Iron looks good. I'll have to try the skirt direct on coals. the hanger steaks have been readily available this year, about a dollar more a pound than skirt
