    I'll have to go see. Bison tends to be so lean there may not be enough fat on it

    Thaw it in the fridge. If you don't separate them there's plenty of fat to keep it from drying. Usually at that point I'm either going to slice it and fry it in a pan with a touch of olive oil at a high heat (just enough to heat it up) and give it a little bit of a crust/color for tacos or just slice it for cold sandwiches. Just depends on how much is left from the initial cook.

    Thanks, it was tasty.
    I start out with Newman's own. I like it better than making my own. I then added a green bell pepper, a couple tomatoes and and a group of green onions.
    I use 3/4 of the bison pack for meatballs and 1/4 for loose burger meat. I cook it all separately then add 2 bottles of sauce at the end.

    For the meatballs I just add salt, pepper, garlic powder and Panko.

    I don't start a sauce from scratch either. I can't remember the name but I use a no salt added/low sodium sauce. It's way easier to doctor up and existing sauce. If I have the time to cook the sauce down then I'll throw in bell pepper till there's nothing left but the skin (then pull it out). Otherwise it kills my stomache. Never could handle bell peppers.
