    Read enough about pellet smokers to figure out I don't want one.

    Wood or a mix of wood and charcoal isn't all that hard. Offset fire boxes are pretty easy to regulate and don't take a lot of checking on. A decent thermometer on top and a decent stick thermometer will tell you what you need to know. A little practice will get you on your way. If you want you can google what it is you want to cook and get temps/time/spice/recipes or any other info you want. Crazy as it sounds, it's the same basic info my dad taught me when I was a kid. Good food isn't all that hard to make.

    Thanks Dan! So got back yesterday evening from the North Shore of Lake Superior. Nova is 6 so in his prime and a bird finding and killing machine. Good year for birds so been freezing and eating to keep at possession limit. Just got back a couple of hours ago from transferring his sister to her forever home in Wi. Was rough she has come a long ways this summer and while not a stone dead killer like her brother she had never tasted a feather until she met me. And is a sweet heart, I fell in love with her. But a lady in Madison lost her husband a year ago unexpectedly and also her 14 year old Toller. The breeder asked if I would give up Aria to her to get one of Nova's pups on the 31st. Was hard and had something in my eyes on the drive there.

    But she has sent me videos and pictures on the way home and it is a perfect match. Excited to get one of Nova's pups and hope he will be half the hunter he is. But miss Aria already. Just got back and leave Sunday for 2 more weeks just Nova and I this time. When I get back have 2 days to puppy proof the house and then get the pick of the liter. Puppies are assholes though. When Nova was almost a year old was afraid he thought his name was damn it. Same time of year with his son so taking the pup out the go on command will be hurry up when it is 20's below zero. Hard to whip it out and go when it is that cold though...

    I know they are farm raised Salmon given your location. I smoked a metric shit ton of Salmon in Washington State back in the late 70's and early 80's on an electric Luhr-Jensen Big Chief Smoker. That I caught fishing out back of the trailer that we rented on the Olympic Peninsula. With Alder chips. After setting the pellicue. Luhr-Jensen has since been sold to wood house products and aren't even a shadow of what they once were.

    But don't even come close to wood chunks. If they did a 8+ hours smoke would over power the food with smoke flavor. Which is why they are manufactured to NOT generate a lot of smoke flavor. And what is up with all the creosote they generate?!

    I saw Solyent Green at a drive in move theater when it first came out. Made an impression on me LOL. Lots of Soy beans around here, well was they have turned gold and they are pulling them as fast as they can. Likely to be mixed with Tofu, the movie version is just around the corner though.. Just saying.
