Correct on the V6 under the plastic engine cover are coolant bypass hoses (believe 2 not sure) and injector wires.
In 2012 my 2009 had the exact same thing happen and I thought it was the water pump so under warranty but the dealer called me laughing and said mice or squirrels. Also said a complete harness over $2000 to install and they always have a problem, or the mechanic could cut out and splice the chewed injector wires so they did that plus new bypass hoses. They put a new thermostat in and flushed coolant for any rubber hose in the system. Comprehensive covered it all minus your deductible (if you have it on your policy). Easy fix assuming enough wire left to splice new sections in.

I'm really hoping that's where they went and it's something that easy. Let me get lucky this one time haha

I hate to hear this! One of my customers went through this issue with his new 911 turbo.. A mouse had gotten into the engine bay, SHREDDED the air filter which got sucked into the turbo and well.. you can guess the rest. $13K, he got the car back. Insurance took care of it all.

Hopefully you can resolve this quickly OP!

Well looks like insurance plans to cover it. Luckily they just have to fix the injector wires and the hose so it was in a good spot:
