AC is cold but my AC fan will just stop.

It will work on occasion but not always.

Also, if I turn off the interior circulation and use just the vent with AC on
I can get a cool breeze... ahhh.

It's about to get warm in Texas

I have the same problem with my 01. If you happen to run across a solution I'd be eager to hear it, or if I run across a solution I'll post it here.

I did find that with mine if I leave the fan on whenever I shut the truck off if has a better chance of coming back on the next time I start it up.

My money would be on a sticky fan power relay. Though I would start simple. Check that all the fuses and connections are tight. Check for a good 12v at the fan connector and a good ground. Work your way back from there

A little late getting back on here but I finally had time to look into it. There was 12v at the blower motor so I removed the motor and the plastic case surrounding the motor and checked it for any damage or corrosion but didnt find any. Once the plastic covering was off I plugged the motor back in to test and it worked just fine. Weird but good enough for me so I put everything back tightly and it has been working normally for about a week now.

The best explanation I can think of is that maybe by unplugging and plugging it back in a couple of times I caused something to make a better connection at the plug or inside the metal casing of the motor. If it happens again I will probably just buy a new blower motor since they are only about 40 bucks.
