When you charge an empty system you charge it by weight which for 2nd gens is 20.1 - 22.22 Oz (not quite 2 12 oz cans), there should be a label under the hood with the refrigerant capacity.
When you charge a system that has an unknown amount of refrigerant high and low side pressure can be used as a guide but it's not nearly as accurate as pressures vary depending on temperature and the vehicle.

Sure it's possible to keep putting refrigerant in but overcharging a system is not good, best case the high pressure cutout activates, worst case you grenade the compressor or blow a hose.

In #27 post you said you were waiting for parts from AutoZone.
I'm having trouble finding a replacement evaporator.
Did you get the Evaporator from them, they list a Four Seasons Part #44050/SKU 195302. Was that the one? Did it fit well? Working well?

    The items I ordered are:
    Heater core #98038
    Evaporator #44050

Both fit just fine in my 2015 Tacoma pre runner v6.
Any other questions let me know.
