I’ll be adding a 1” block in the rear of my 3rd gen, 5100’s all around. What is the purpose of a bump stop and do I need one in the rear when it’s only going to have a 1” block?

If your doing a block lift you don’t need to really worry about bumpstops. It keeps the suspension on vehicles from bottoming out and prevents any metal on metal contact. Just run the stock bumpstops. Dealers install setups like that all the time and don’t even change out the shock let alone bumpstops!

Shit bolted onto other shit, and junk.
Bumpstops can also prevent overarching rear leafs. In which case, their height should be adjusted as well to compensate for the block lift so that they contact the frame prior to the leafs achieving a convex shape past linear or negative arch. If you aren't going to load it down, jump it or push to any extreme then I would worry. Worse case, you screw a set of stock leafs and then pick up another set cheap here or on craigslist. Just because you add block doesn't mean the suspension gains any additional travel capabilities only clearance.
