    Air fryer fresh cut fries with avocado oil spray
    Local curds from the farmers market
    Homemade mushroom gravy

    Gravy
    Tbsp butter
    Tbsp olive oil
    Cup of small diced mushrooms (portabello)
    1.5 tbsp flour
    Salt and pepper to taste
    1.5 cup broth of your choice (I used veg because we had some in the fridge)
    Italian seasoning ( rosemary thyme sage etc)

    Melt butter with oil. Add mushrooms and cook 3-5 minutes. Evenly spread flour to dry out butter and oil. Continue cooking on med low 3-10 minutes to cook off raw flour taste. Whisk in broth and salt pepper and Italian seasoning to taste. simmer on low while fries cook.


    Fries
    cut and soaked in water minimum15 minutes.
    Pat dry
    Spray with avocado oil
    400 for 30 minutes.
    Shake the basket every 10 minutes.

    1/2 ts smoked paprika
    1/2 ts onion powder
    1/2 ts garlic powder
    1 ts basil
    1/4 ts salt/pepper mix.
    2 TBLs EVOO mixed in to make it stick to the chicken.

    green and red bell pepper squares
    pepperoni and sausage
    green onion
    shredded cheeses (sharp cheddar and queso quesadilla)
    basil and savory on top

    375° for 10 minutes

    Did some crab cakes in the af but I used little scallops instead of crab 67BCC8F8-66F2-4B52-9E93-FEFC76E9E4AC.jpgI loosely used this recipe but substituted @bvbull200 ’s On Point rub for the Old Bay and Worcestershire sauce the recipe calls for.
    Mix all ingredients minus the breadcrumbs to make patties then coat patties with the breadcrumbs on their way to the af. I sprayed some olive oil on them too. 15 min at *375

    Chicken 350° for 1 hr 20 min. (until 165°) 5.9 Lb
    Then turn off rotisserie 450° 5 min each side

    1/2 ts paprika

    Its been great for making food for my little ones (so much easier and faster than the oven) : chicken nuggets, French fries, tater tots, hashbrowns, fish sticks, and mozzarella sticks on the regular.

    For my wife and I, various seasoned, marinated, or rubbed versions of the following: shrimp, prawns, salmon, sole, chicken, steak, squash, zucchini, bell peppers, and Anaheim peppers. Plus taco stuffed bell peppers.
