    but where is dat aged beef dough?

    people kill me when I tell them that I will let a quartered up deer ride on ice in a cooler in my truck for 4 or 5 days before I start cutting on it and they freak out. I worked at krogers for almost a year when I was in high school and there was a sign up in the meat department that said "all beef aged a minimum of 12 days before processing" so chances are by the time you eat store bought beef, the bull has been dead about 3 weeks. aging breaks down some of the proteins in the meat, and thus makes it easier to work with and an overall more tender piece by the time it is cooked

    Auburn University has a Meat Lab. They sale what they harvest. Limited hours through week. Prices slightly better than store. I took a tour yesterday of their operation and decided to swing by and pick some meat up for dinner tonight.

    you are correct, myoglobin is strongly attracted to o2 (more so the hemoglobin and that's why muscles can pull o2 out of the blood) and high concentrations of carbon (either dioxide or monoxide) will displace o2 and not allow the myoglobin to absorb it... oxidize which causes a discoloration, however once the meat is exposed to an oxygen rich environment again it should start being less and less bright red
