    Had to modify it because smoker makers know nothing about BBQ one last thing i need to do to it then its ready to rumble.

    Found a Brinkman offset on craigs for really cheap. Offsets are cool because of the amount of rack space (i love doing ribs) but unless you are willing to spend close to $1000 they dont have the longer baffle or a deflector duct. This thing is solid though definitely not that crappy thin sheet metal. I need to pick up some bricks to help keep temps level but after that this baby is ready. I BBQed/smoked twice a week in NM, I need to get back in the game. There was two gas grills here when I moved in but lets face it gas is for hot dogs and cheap hamburgers. everything else needs to be on coals

    Yes but not much but not that's the the main benefits. It keeps the the exhaust lower to the grates and allows the heat to be trapped in and escape at a lower point rather than it being hotter towards the top of the grill. It will allow the temps to be hotter in a larger portion of the smoker including the area with the cooking racks.

    Lol let's smoke some ribs this week! I can't find any good woods here. Walmart and those store sell the chunks for super expensive and I prefer to use really small logs, at least I know I can get my hands on some chunks.

    I emailed the guy and he said they are made of mostly a mix of Hickory, maple, cherry, and oak and he uses them in his smoker.

    Everyone here uses alder but I hear that its a bit light for pork and beef. I did contact a guy for some though, at least worth trying

    Gentlemen, as of next week I will be the proud owner of a new Millermatic 211 welder. If you need some welding done, I'll be happy to do it for ya for a very small fee. I am not a pro, but I am confident enough in my skills to weld on my own truck. (hey, my sliders haven't fallen off yet :p) And you all know how much I love my truck.

    I'm gonna need some new tabs for my dually's in my bumper. They aren't long enough right now to aim them down far enough or put the amber covers on.
