I was asking about both rubbing and if adjusting the caster to prevent rubbing would help with the understeer

    ...too much shit to list.
Fair enough. @Justinlhc is dead on about the backspacing. 3.5 is not my preference for a second gen,
Mostly because of scrub radius issues. But the rubbing is nothing a BFH, grinder and a welder won't fix.
I was focused on the perceived understeer.

Thanks for providing this link @Justinlhc Really breaks it down for you. I found a copy of my alignment I had done post-lift, but pre-285's.

So basically, on Thursday when I take it to the alignment specialists, I'm going to ask that they try and roll the lower ball joint forward for maximum caster, then adjust the upper ball joint to get the caster and camber aligned within spec. Hopefully this will move my tire forward enough to where it will miss the rear fender and not too far forward where it will hit the front. And hopefully the ride won't suffer.

I went to the alignment specialist today. Told him I wanted the caster maxed out on the LCA and then move the UCA Ball Joint to line it up and then make adjustments from there. He maxed out the lower control arm but call me crazy, it looks like he pushed the UCA in the opposite direction. I'm still rubbing, but not as bad, I had just never seen the ball joint on anybody else's rig set in any other position besides "D" or "E" and it looks like mine is on "G". Here's a pic of the drivers side:
