New strings can stretch and you usually have to tune a few times if they weren't stretched, but it doesn't sound like that's the issue. Is your tailpiece seated properly and are the anchors staying into the body? I just finished building a LP that I had to glue the anchors in because they were pulling out.

The guitar is still pretty new to me so I'm not sure if everything is working properly. I'm used to an Ibanez with a locking trem system so I wasn't sure if this is normal for the type of guitar. From the suggestions here, it doesn't sound like it is. I think I'm going to change the strings and check everything out and lube the nut. If that doesn't work, I'll take it back in to get them to set it up.

Thanks for the tips everybody !

I’ll preface this by saying I’m no expert. I’ve been playing since HS (25 yrs) on a hand-me-down Oscar Schmidt acoustic. I love that guitar - still have it - but I splurged in a big way this past July and picked up a new Gibson J45. Love it so far, although I am having trouble finding the right strings to do it justice.

Is it the sunburst kinda finish? Nice looking guitar. Have not played a Gibson acoustic.

Forgot to post this. All done. Testing the action before I glue in the nut on this picture. Sounds great. 50's wiring. Bourne pots.

Yes, sir - it’s the sunburst. I’d post a pic, but it looks just like the photos on the interwebz.

A guy at our local music store made a compelling case for nickel bronze strings, but they didn’t really do much for me. Back to phosphor bronze…

Any acoustic players on here ever try parabolic strings? Worth it or gimmick?

I've seen some of the comments that folks have suggested and they've hit most of the common culprits. Graphite in the nut slots and saddle grooves (less is more) is a good place to start. The nut slots might need to be polished more, if you hear any pinging while you tune then that is definitely the case. Sometimes running an old piece of each string along their slot can mitigate the issue, but ultimately you'll want a tech to truly polish them because that trick really only works for the wound strings.

Stock strings should be changed out for sure. Make sure you keep tension on the string as you wind it on the post because any slack there will give you problems for the life of that string. I use the typical knot technique on my posts and my SG is incredibly stable, always has been for the 17 years since I got it. I'm sure YouTube has plenty of videos on that. If the note goes sharp while tuning, always go back below the note, tug on the string to remove slack from the post, then tune back up to pitch. Not trying to lecture you, just making sure we cover all the "best practices"!

Gibsons are a different beast when it comes to tuning stability, but most problems are solvable or chalked up to user error. If you take it back in to a tech make sure to mention your tuning issues in detail. Good luck, let us know what you find, and enjoy that LP!
