Metric tire sizes can be calculated in inches if that makes it easier for you to understand:

    255(width of tire in mm)
85(ratio of tire width to sidewall in %)
    16(diameter of wheel in inches)

    Therefore:
    255/25.4 = 10.01" wide
    255*.85 = 216.75/25.4 = 8.53(height of one sidewall in inches)*2 = 17.06(2 sidewalls)+16 = 33.06" tall

The same can be done for a 285/75/16
    285/25.4 = 11.22" wide
    285*.75 = 213.75/25.4 = 8.42*2 = 16.83+16 = 32.83" tall

of course actual sizes will change based on manufacturer

Youl want the spacers for 285s. You dont need 1.5" ones but if you got em then its just aswell to use em.

Depending on the tire youl rub the uca. My maxxis bighorns have sidewall lugs that do make contact with them. They also rub front and back of frame aswell as the swaybar with 4.5"bs.

I'm running 33x10.5x15 on stock 15" steels from 1996. No issues whatsoever with a 2.25" lift give or take. These should have been the stock size in my opinion...
