Short the two wires in the harness to the seatbelt (solder them together, twist them together, or whatever - create a short between the two). The computer is looking for a 1 and it sees a 0 until the buckle completes the circuit. The circuit's natural state is open and the seatbelt is what closes it, shutting off that annoying chime. So force the circuit closed by completing the circuit with a jumper, or solder, or whatever. You aren't introducing voltage or changing anything in the circuit, you are just forcing it closed. If you can wire a household fan and know how to twist the white romex cable in your house to the white wire from a fan with a wire nut, you have the skills needed to do this to your seatbelt. You just do it with smaller gauge wire and don't use a big ass wire nut - use solder.

I have hunting property and often need to turn off the belt chime.
I order "bottle openers" from ebay that look exactly like seat belt buckles. Works great and requires little effort.I keep them in my chalk bag drink holders at the ready

I'm in the same boat. All the folks saying "wear your seatbelt" are being hung up on the seatbelt part of it. I just don't want a buzzer when I choose to do something safe for a few feet or yards.

Like someone here already mentioned, get a Carista and you can turn off the seatbelt chime, and a lot of other things you can also do with the Carista. I did that last year soon after I bought my 2020.
