    Looking online I see many dimensions of the tent open: 55" (1400mm) wide x 94.50" (2400mm) long x 51" (1300mm) high

While the mattress size: 52" wide x 91" Length

Being ignorant to the topic I am wondering how comfortable 2 adults (5'11" myself, 5'3" wife) a 1 year old, and potentially two very small dogs (Yorkie and Dachshund)

The idea of a RTT isn't to be able to be sprawled out right? I feel like we would fit and it would be more of a straight sleep.

Side note: I am looking at this tent because a local is selling it and a CBI Overland Rack for a really good deal.

Depends on how long you plan on keeping the tent. That is the width of a double bed. I guess you could play Tetris fitting everyone in there but your 1 year old will be growing and changing who fits where. I would go bigger.
