    Candied Salmon...is that Salmon cut in strips and smoked with a heavy brown sugar glaze?

    Sounds like the "Squaw Candy" (no offense) recipe my friend gave me 5 yrs or so ago...that stuff is delicious...now I know what I'm gonna do with the Salmon in my freezer that needs to be removed to make room for fresh catch this summer...Thanks for bringing it up, eh?

    I'm gonna need to make sure I got it right by checking with my friend, but it's a basic smoked salmon, but you cut it in strips before marinating, then, while it's smoking, you intermittently sprinkle additional brown sugar on top so it glazes over nice.

    Cutting it in strips exposes more meat to soak up the sugars and you stop smoking before it gets too dried out...kind of chewy...but it is awesome. Here's my basic brine for smoking:

    Salmon Brine for Smoking

    1/2 gallon Apple Juice (2 litres I guess)
    3 cups Brown Sugar
    3-4 table spoons Course Salt
    (do Canadians use table spoon measurement?...I have no frickin' idea if there's a metric equivalent :confused: :D)

    Marinate Overnight
    Air Dry to Tacky
    Smoke 3-5 hours based on thickness of your fish pieces/strips

    Wasted money on a lot of different Brine mixes with somebody or other's name on it in my first few years up here. Got this simple one from an older guy at work...it beats all the other one's at about 1/3 the cost! ;)

    And yes I see you're not Canadian, but since I'm a guest here, I felt some protocol necessary, eh?:canada:
