In normal "Drive" mode my 2021 frequently downshifts on declines and hills around town, typical driving conditions. I got so that I wanted the truck to brake when I wanted it to brake, and now just automatically put it in "S" mode and tap up twice to force it to have the highest "locked" gear - now there are zero downshifts on hills where it typically would. I understand most people, and the OP, would prefer the truck not perform in this fashion (or have an option to defeat it), but until/unless someone comes up with a solution the S mode fix works fairly well.
