Would anyone happen to have a box or storage bag they can reccomend that fits pretty well behind the rear seats pretty snugly that I can cram things like a roadside kit or a bottle jack into?

Google trunk/cargo space cargo organizers. They make a variety of different brands and sizes.

    I have Thule.

I'm looking for something that will fit well in that tapered ~5.5-2" thick space behind the rear seats in the cab

Nothing fits well back there. It also wastes a ton of space. Planning to tear the plastic out and use any threaded holes to support whatever shelf/tray/bin structure that suits my needs. Tool rolls are a very efficient fit, come in lots of options these days. Soft sided storage can help reduce rattling. Some people go bananas with molle panels, but that doesn't seem very efficient or economical to me.

How does that fit behind the seat if it is full of gear?

Yeah, I've been thinking of going the route of ripping the plastic out, putting in a molle panel and then getting smaller bags I vencro to that

I'm not poor but I wouldn't spend money let alone $475 for storage back there. I just use bags that are available cheap or often free when you buy something. I have several of different sizes and colors behind both sides of back seat. Don't know why it has to be fancy or complicated.

Like shakerhood I also go the roll up tool bag it slides right in the corner perfectly. The other bag I used is a midsize dry bag stuff it with my junk fits perfect in the cubby spot.

I use these tool rolls in all my vehicles. Fits in the rear under seat storage or behind rear seat. I also put adhesive velcro in the dead space above the subwoofer & attached a 10” x 5” x 2” pouch to it for random items like a flashlight, documents, GoPro mounts, etc.

I ripped out my plastic. Had a molle fabric panel. Then I put the plastic back in and stopped putting so much shit back there. I have some tire stuff, plug kit and compressor hose back there and maybe a tarp and a blanket, first aid kit.
