Have a 03 tacoma extra cab about to lift it 3inchs and I'm trying to figure out the best wheel size with 285/75/16 tires. Any suggestions on width, offset and back spacing?

Depends on what you want really.

For width you can get away with anything from 7"-10". I'd recommend 8" for the best at holding the bead.

For backspacing I wouldn't do anything more than 4". I have 3.75" and my 12.5" wide tires just barely stick out past the flares.

So smaller bs equals sticking out further ? I'm looking at a 16 by 8 rim with 4 in bs with a 12mm offset what would that do with a 285/75/16 with 3 in lift?

Yup, the smaller the backspacing the closer the lip on the back of the wheel is to the hub.

With that wheel you're looking at you shouldn't have any issues with it fitting, but with 4" backspacing you may rub the frame just slightly at full turn.
    Thanks.

Yeah, my tires rub, so I had to trim some.

Really almost any tire that is 32" or larger and will see full suspension travel will require you to trim some.

Sounds like you need 16x8 3.5" backspacing 265/75/16 to not rub at all and have them stick out slightly...
