I want to get an overland bed rack but need to be able to haul a canoe. I'm sure a roof rack would work better, but I want the bed rack first... question really is, do I need a bed rack that's higher than the cab?

definitely consider the gunnels on your conoe of choice for potential fit and clearance issues.
some canoes (white water) have pronounced rocker.
still water canoes have straight or slightly curved
