    Usually you want low temp cooling for many hours to render the connective tissue down. I don’t like pot roast so I can’t give you exact times. :rofl:

    Dunno, was it dry also? Could always start it late, pour a beer in it and let it cook on low overnight. Throw the veggies in and turn on high till they are done.

    Usually when we do a roast we will throw it in before bed say around 10-11pm and cook on low until about 12 noon the next day and it is pretty tender. Have you tried a pork roast? In the words of @Bigdaddy4760 “those are pretty forgiving”... When we cook ours over night we will throw in a packet of AuJus seasoning and a packet of ranch seasoning along with a whole stick of real butter on top.
