    It’s pretty dry. It’s edible but that’s about it. It’ll go good mixed in with eggs, tacos, sammiches though. It’ll all get eaten still

    I usually smoke my briskets at 225. Never had a dry one. You eat when they’re done not when you’re ready. I usually rest for 45 min to an hour.

    You should also save all your bacon grease, just keep it in a jar, or can with a lid.

    Try using that to fry things with. You're cardiologist will hate you but there's nothing like anything fried in it. I'll use a couple tablespoons in the pan melted down before I pour in the cornbread batter. It's also good over grits.

    Idk why I did this one at 250. I think I had my temps mixed up. I need to reference my BBQ journal so I don’t forget. Gonna log this one in as a failure so I remember not cook it that hot again.

    Low and slow always wins. Just plan the time for the cook and don’t rush it. Also do you run a extra pit temp or just going of the factory gauges
