@Bigdaddy4760 Hey Maner I have a couple of questions. I normally cook whole butts but there weren't any available and I got a couple of partials. They are wrapped in the string netting I am assuming you leave that on when cooking? These also have a decent fat cap which I usually do on the top side.

 

Yes you can leave them on while cooking. Just holds everything together from deboning.

 

That's what I figured. I'm going to smoke them for 4-5 hours then wrap in foil with either some apple juice or Margarita and cook slow for another 3 hours or so.

 

10-4 that net cut off easy with some scissors when your ready to eat
