    What temp you cooking at? My tritips only take me about 1.5 hours tops.

    How big is the tip? I usually get the 2 pack at costco that's like 1.5 pounds or so each and cook at 225. Pull it at 100, sear each side for about 1-2 minutes each and rest for a few for a higher medium rare.

    I like my tritip closer to medium than medium rare. I try and aim for about 140* for it's final temp, but definitely nothing above medium. Blood is good! :D

    has anyone tried to cook tri tip at around 450-500 and then sear for about 2-3 minutes? Anyone familiar with Santa Maria style tri-tip? I’m going to get flamed for bring up CA

    Santa Maria style tritip is essentially the reason tritip is even known. That's the real way to do it. My local costco has some of those santa maria style grills and I really want one but I don't got the space for it.

    I can attest as I used to eat them in Santa Maria all the time. I’ve been working on replicating the flavor as of recently but with a new Kamado, I’m learning my limits! Really do miss those tri-tip sammies!!
