2020 with 75k miles. I'm starting to notice a vibe or shimmy when breaking, especially at highway speeds. I'm seeing posts from others saying they get over 100k on brakes. I realize everyone's vehicle / driving is different but just trying to get some input on when I might be ready for brakes. Which leads to- how can I check them? Is replacing them difficult or something I can do in my garage? I've replaced struts, leaf springs, arms, etc before. Just don't have any brake experience.

you can check them with a run out gauge...if the steering wheel shakes when applying the brakes there warped...aftermarket pads can vibrate also

Sounds like your rotors are warped.

My factory brakes shimmied a bit. I had them changed pads/rotors at 50k and they were getting low but not quite done yet. The brand new brakes have the same little shimmy. The truck has always done it. I’ve read others with the same complaint, I guess I’ve learned to live with it since the truck will stop on a dime and pick it up.

Check that the lug nuts are torqued to spec. If lugs are torqued properly then check for warped disks.

Super easy to change. Vibs are due to pad building up on rotors.very rare rotors warp.

Yes I feel it in the brake pedal, as I said usually on the interstate like when I have to brake at 65mph for slowing traffic etc. Not so much at a traffic light going 35mph.
