    Small-ish. This will be v1.0 for catering and setting out food straight from the pit as opposed to a concession type setup.

    I think it is 8' long? 9'?

    I measured out there, but I forget.

    Just need the smoker, a retractable cover, and a little space to be able to pull food off the smokers and put out in chafing dishes.

    The nice part of the cover hooking to it partially is you get the extra space without making the whole rig larger.

    We can lengthen it very easily if needed. Making it wider would be a big pain. Could always build a new if needed.

    I think we roll with this plan unless we hit some major logistical snag. I don't think it'll need to be wider. Longer may have it's benefits, but I like the idea of being fairly compact, too. As it sits, when connected to the Tacoma, I could fit in two parking spaces. I like that.

    The main reason for the HeaterMeter is to help with temp control, but since it reports temps as well from right on the grate, I'll default to that value.

    I think a smoker without a dial, though, looks kind of naked, though. Besides, the dial will still serve some function. Once everything is settled in, a quick glance at the dial will give an indication if anything has fluctuated.

    Yessir. I have a 3" dial on hand with a 1/2" NPT that we can use for sizing/location/etc. I believe I left a coupling in the box of stuff in the shop, so we should be good to go there.

    I was talking to a sales rep at that place and they sold the last 5" dial / 4" stem unit while we were discussing. Dammit.

    I think we're a ways from putting on the shroud anyways, so not a huge deal, but I'd have liked to have brought it out Sunday.

    If I may suggest some sort of shielding. Had many a quality gauge fail if rain fell on it. Seems like the quick transition is too much for the bourdon tube to take.
