    I skipped about 25 pages in the middle.... Do you have an off the shelf thermometer that you trust - or did you buy six of a model that you like to find out which two were accurate?

    I use probes to monitor the meat temp, and don’t stress too much about pit temp. When I do monitor the pit, I use a remote for that as well. That way you don’t have to constantly get out to check on it.

    If you're talking about the door mounted thermos, they are off-the-shelf models that come tested/calibrated and include a calibration screw to adjust as necessary (I'll have to look them up to get the brand again). I haven't done the boiling water test with them, yet, but in the dry run of firing up the smoker, they both read consistent with each other. I'll check them again to be sure. That said, they are really more for getting a feel at a quick glance and a little bit for show. The readings that I will rely on the most will come from thermocouples run in to the pit. 3 for meat and on in the "primary" cooking location inside the smoker. The pit probe will let the controller know what it needs to do with regards to the blower and damper as well. It provides me with data on the controller itself (if I want to read while standing at the pit) and remote viewing via my phone or web browser. Those I can get from Thermoworks or a similar trusted site and can test with ice/boiling water as well.
