Can a code scanner check live transmission temp?

Depends on the scanner, but yes.
Saturday I changed the ATF on my wife's '16 highlander. My ScanGuage ii read the ATF temp so I could adjust the level correctly.

Here's the Toyota specific code ScanGuage supports.

So at least that stuff is possible, though it may not be supported by your scanner.
