1 I have had my 2in rear block with a stock shock for a year and had no problem with it.

2 is a after market shock necessary with a 2 block

3 I want to go back down to a 1in because with the 2in rear 3 front it is way to high In the back would that be because the shocks in the rear are over extended

IF I understand what you are asking, yes, you can run a 2" block in the rear with stock shocks. It's not ideal since the stock shock will limit your axle droop.
The stock shock in the rear should have no influence on the height of the truck when sitting still.

The shock length will literally limit the amount of 'droop' you can achieve when articulating the rear axle in off camber situations while off-road.
