Not sure if anyone can answer this but looking at a pair of used snow tires will these fit on my 17 inch stock rim?

Those will fit. You may get slight rubbing on plastic in the front when the suspension is stuffed but it would be minimal and would be easily reshaped with a heat gun or trimmed for clearance with a dremel.

For snow tires the date of manufacture is important. I'd stay away from anything more than 4 or 5 years old because they'll be close to the end of their useable life, regardless of how much tread is left.
