if you run a dash cam that has wifi capability, the phone may connect to that wifi and not to the vehicle.

recently had this issue myself, disabled the wifi on the dash cam, and carplay connected to the headunit normally as before.

You know, I've had the same battle with the head unit and Garmin dashcam fighting when trying to get onto the dashcam, but I wonder if this might be kicking the phone off the head unit randomly. I'm going to try disabling the wifi on the garmin cam. For some reason, I thought it was off anyway, unless commanded on by the garmin drive app, but it's worth a look.
