    RV doesn’t work as well for thicker cuts which is usually what I get. I get pretty picky about my temps. If your use a heavy enough cast iron over a nice gas range you can get a comparable crust coming out of the SV even starting with a wetter steak.

    Nothing wrong with either way of course. But the SV is my preferred way due to ease and time. Throw it in and go play or work for 1 to 3 hours ( don’t have to watch or worry about it), dry it, and sear it.

    I always sous vide then sear. Just sous vide to 115 and sear the piss out of it. Finish with butter and rest. Always a nice crust and never over cooked.

    I used to sous vide and have done dozens of steaks and various cuts...then I tried a reverse sear thick cut ribeye...game over.

    My weed burner takes care of any steak for the crust. Quick and effective.

    Does your pellet pooper have a way to grill over direct flame? I did some chicken thighs recently where I cooked them up to temp then slid over the diffuser plate and gave them a few mins over the direct flame from the fire pot. Was super delicious.

    I just finished off a gallon after 2 years.

    I mix it pretty strong. 4oz per gallon.

    You can get away with 2oz per gallon from what the directions say.

    Sounds like my mess. Mostly clover and crabgrass and other undesirables. I'd love to rip the whole thing apart and seed in the fall this year, but still got too many pine trees left to remove.

    Oh, man I hate that stuff. I've sprayed so much Roundup around my walkways trying to kill it, and it always comes back.
