    I usually prepare big batches of 60-70+ brats for my club here in San Diego (www.srop.org) for our events. I haven't tried piercing the casings
    because it would be time consuming. I might give that a try next time I make a small batch. Thanks for the recommendation

    30 minutes or so with brats in beer and they have enough flavor. IMHO. Important to heat simmer then allow to cool a bit. Sucks in some beer goodness with no piercing.
