If I were to buy a set of coaxial speakers, what other parts would I need?

I know I would need speaker mounts, bolts, but I can't seem to get a definitive answer from my e-research on what kind of cables/harnesses/whatever to get.

And I would probably be running them through an amp. And in that case, what would be a good amp to get? I would probably upgrade the other speakers at a later date, so I would need a 4 channel amp, right?

You will need the mounting bracket as you know. You do not need a wiring harness for the speakers if you are going to run new speaker wire or plan on cutting the OEM plugs. Just remember that the stock speakers (tweeter up high and the woofer lower in the door) are run in series.

If you are using the OEM HU, then you will likely need an LOC to give a low level signal to your amp, unless it has high level inputs.

I'm on an aftermarket head unit, and I'm not sure what an LOC is

You won't need an LOC (line output converter) if you have an aftermarket headunit. :)
