    That isn't just 'dark skin' dude that shit is straight up burnt. Bark should be a juicy mahogany color and not charcoal flat black. In those photos I'm looking at black so unless there's some weird color issues that is indeed burnt. Looks to me like you had large amounts of smoke instead of a TBS (Thin Blue Smoke) that is the goal. If you use too much smoke you can introduce creosote which will make the meat bitter and can potentially be dangerous. You can criticize my woman smoker all you want but I pull off some pretty spectacular meat by anybody's standards... not just for an electric smoker. You can keep taking shots at me if you like though. ;)

    I understand the electric smoker. And yes I know about keeping the smoke blue. But if you google and I know you google everything, the darkness from mine will be the sugar in the rub I used. And the skin on this one is not even crisp it can be pulled right off the turkey and folded... No bitter meat, and I assure you not dangerous..

    Right because this is the first turkey I've smoked( although it's the darkest the skin has been, I've also never used sugar in my rub before but I like it.). :p it's actually one of my favorite things to smoke. Mine two years ago actually beat Rudy's in a blind taste test.

    Oh and if anyone can find this its not bad. Never had it before this year says its only sold in colorado. Found it at the PX on ft Carson.

    In the past I would be heavily tempted to just go by myself, but after coming across that Jeep stuck in a bog 8 miles from the middle of nowhere last Aug, I'm no longer tempted.

    So, who wants to see how far up Deadman Rd, Cherokee Park Rd or Laramie River Rd we can get?

    I had thought about closing off those squares too Noah, but I'd be concerned that the frame there would just fill up with mud/water and rust out.

    Somewhere on here I saw a post where someone was using plastic plugs for those. I think they were originally made for gym equipment or something to plug the ends of HSS members. That might be a better option? Or you could cut short and weld the end of the pieces that were originally in there and bolt them back in.

    Edit: I just clicked on the picture so I could see it better and it looks like you already cut those pieces short so maybe that was your plan? Disregard the rest of the post if so :D
