So I picked up an '07 SR5 Access Cab with the 427 and 5 speed manual from a family member. I love the setup and simplicity of the truck, but it had been heavily smoked in years ago and I cannot completely get rid of the smell. My wife is very sensitive to smoke smells, she put her foot down, said either the smell goes or the truck goes. So I did what any sane guy would do when he loves a truck and I started shopping junk yards to completely replace the interior of the truck. It took a few months and many phone calls, but I have an entire replacement interior in my garage:

    Seats
    New floor carpet
All plastic - door panels, dash, consoles, the trim around the door openings
    Blower motor

Only thing I'm missing is the headliner (impossible to find at junk yards that aren't trashed, they're rarely inventoried, the ones I do find are $$$$ and they won't ship them). I plan on removing the headliner, bringing it to an upholstery shop, and having them re-upholster it. It also needs a new windshield, I'm going to do that at the same time. I thoroughly cleaned all the new parts and I'm ready to dig in.

I'm somewhat handy and patient, YouTube has a lot of very helpful videos, and I bought a set of trim removal tools and a replacement set of interior trim connectors from harbor freight.

    My plan is:

    1) Remove existing interior, taking lots of pictures and keeping track of connectors
    2) Deep clean what is now exposed in the inside of the cab, and set off a Biocide Systems Auto Shocker Maximum Strength Odor Eliminator
    3) Have windshield replaced
    4) Install new interior
    5) Bring to upholstery shop to have headliner installed.

Any tips before I start from anyone who has worked on interiors?

Watch out for those airbags. Avoid touching them but if you do make sure to watch some videos on how to disconnect them properly. I just had most of my interior removed except the seats on my 17 Tacoma and worked around them rather than risk setting one off. Surprised at how easy it was to tear down and put back together including the dash.

Mine only has the front airbags, no sides, but I will be careful with the dash. Luckily the dash is the part with the most youtube videos showing how to remove. Thanks for the tip.

I'v done many dash pulls on Ford, GM and Dodge trucks and one 2nd gen Tundra, not a hard task but there is alot of stuff to keep track of and remember the order of upon reassembly.
One thing I can tell you is watch out for connectors in close proximity that can be swapped as I ran into this on the Tundra, it would be a good idea to label them or mark them with a paint pen so they don't get interchanged.
A few pics from the Tundra job.

    After you do the interior.
You could use an Ozone generator. You can find decent ones for a reasonable cost now.
My father is a an Over the Road driver (big rig). His company uses them in all their trucks before issuing a truck to a driver.

Car odor bombs.....basically you start car with ac running and set it off in middle of car and let it do it's thing for about 15 min with windows up. Had to do 2 of them in my xB for same reason. I smelled like smoke after driving it. Those things kicked ass and smell is gone. I never even steam cleaned the seats and carpet. 2 yrs later and still no smoke smell. About $20 for 2 of them at auto parts. Think they were maguiers brand.
