    but by flipping it over cookie/brownie dough runs back down into the cupcake pan.

    maybe a little weight on top

    That could work! I'm not sure what you could put under then to keep it from sinking to the bottom though. You'd need something thin and I'm guessing metal just to space the coffee mug up about 1/4".
