Sure but you will find many people dont trust a 2" spacer. Hell they barely trust the 1.25". Also, a 2 inch spacer will put stress on your bearings.

So the best thing to do is get new wheels with the correct back spacing?

Thats a better option. Also if a wider track is what you want you can put in a long travel suspension but its real spendy.

You wouldn't happen to know the correct back spacing I would need or offset for wheels to push my rubber further off?

If you do get spacers make sure it's hub centric.

What some people don't understand is that changing wheel backspacing to achieve stance versus using spacers doesn't make any difference to the load on your wheel bearings. The more offset you achieve, the more stress, regardless of how you get there. Spacers get scary because they put more stress on the LUGS specifically. Don't think that by avoiding spacers and going with 3" BS wheels you're doing your bearings a favour...

I'm running -12 on a 9" wheel and they stick out pretty far.

the bearing thing is very important. Everyone uses double ball bearings these days for less rolling resistance including toyota and compared to old school tappered bearings they last no where as long. The bearings are press fit too so not anyone can attempt this.

I'm just trying to figure out what offset I would need to run with 35x12.5xR18 6" zone suspension lift to get my tires to poke about halfway out the fender well I don't want them completely out of the fender well just about half.

That's actually good advice, whether sarcastic or not. Those guys are all about that deep dish wheel life.
