Cross country trip. Any suggestions?

My wife and I are moving from the Tampa Bay area of Florida to Santa Rosa, Ca at the end of the month. We are selling everything and only taking what we can fit into my 17 Taco Crew Cab! We want to make the trip interesting and are looking for ideas on where to stop. She is from another country and has never seen anything but Florida. I was thinking about going up to Savanna and then cutting across that way instead of hugging the boring desert. We will have all of our belongings with us so we don't want to do any real off roading unfortunately. Also we are not sure if we can squeeze it in yet but we may go to Seattle first and go on a week cruise to Alaska before we head to our new home so that may change our course at about Colorado and keep us from hitting the Grand Canyon. I was thinking of stopping off in the Smokey Mountains, Nashville and Denver but not sure what else or whats a must see in those areas... Any suggestions?
