    And since the outside gets trimmed off anyway, the initial butcher would be considerably quicker


    Any one ever dry aged a deer for a month?

    I have done beef when I was a meat cutter at winndixe did 25 whole loins strips for a customer amazing.but I believe venison does not have the ability to dry age I thinks it is missing a enzyme to do this, remember reading this some where but could be wrong been a long time since that job.

    I’m getting some of those bags for Christmas. I’m excited to try them out, but it’ll be on a beef strip loin. Deer loin is already soft and tender and that’s the only part I ever steak up. The rest goes to burger, sausage or jerky.

    Yeah i was most thinking about everything on the hind quarters, since there is already a good bit of sinew that needs to be trimmed i didnt figure you would really be losing much and getting tender steaks out of it

    Just in case anyone doesn't already know this but those vac bags are too expensive in the store. I bulk order the rolls online for way less. They've worked as good as Foodsaver brand rolls so far.

    I don’t see the Umai style bags in this link. I’d definitely be interested in a cheaper option there. The Umai bags let out moisture somehow without letting it back in, so the meat dries without spoiling I guess. Not sure exactly how it works but Santa bought some for my fam to give me to try out.

    My mom and sister and girlfriend have been saying I have a huge Christmas package coming on a pallet. I was thinking a plate bumper or something but how would they know which one to get? So I racked my brain for a couple of weeks trying to figure out what would be so big. Had no idea what it was going to be but it just showed up a few minutes ago.

    ya man, I had a friend years ago who was working in a fish processing plant, cutting heads off of halibut or something, and he cut his ring finger long ways down the middle. Doctors tried to reattach it and had an electric motor on his wrist moving the finger back and forth. It didn't work out.
